Tonight will be a night of running (gotta do a 4-miler at least tonight) and then baking.  My girl over at was boasting about these delish-looking (and healthy) sweet potato oatmeal raisin cookies!  They look amazing and easy! I can’t wait to bring them to work tomorrow and see if I can fool my kids with “which veggie is in your cookie?”  heehee- yum! I will let you know how they turned out, but Tina’s look sooo yum!



  • 1 cup old fashioned oats
  • 1/4 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 1 cup mashed sweet potato
  • 1/4 cup canola oil


  • Pre-heat oven to 350*F.
  • Combine all ingredients in large mixing bowl. Blend well.
  • Spray baking sheet with non-stick cooking spray.
  • Use a tablespoon to portion cookie onto baking sheet. Flatten cookies with back of spoon.
  • Bake for 18-20 minutes.
  • Remove from oven. Cool on wire rack.
  • Eat and enjoy!

Tonight was awesome because I got in a nice workout at the gym, then went to whole foods.  Glorious.  Whole Foods.  Love it.   Shout out to my check-out girl Bernadette, who I introduced to the blog world.  Hey girlfriend!

I picked out some individual Cliff bars (carrot cake-done and done already- was just OK and crunchy pb-my fav) and a whole box of PB Cookie Luna Bars:

Also pictured is pound cake for the Husband, pork for a yummy crock pot pulled pork Sunday (with Jalepeno cornbread…can’t waaaiiiit!) and items for dinner:  jasmine rice, chicken breast, whole wheat naan.  I just KNOW Husband is going to give me crap about the bo of Luna bars and he will ask me for sure if they will be like the “Fuse drinks.”  Basically, I was ALL ABOUT these dumb Fuse drinks, and when I belonged to a wholesale club I insisted on buying an entire case…and drank about 1, if that, within a year.  Eventually those babies when in the garbage. Sorry Fuse!

Tonight I made the most amazing dinner!  I used a curry sauce and simmered this with the chicken breast (bite-sized pieces) I had browned for about 20 mins.  I made steamfresh veggies (mushrooms and peas in garlic sauce-SOOOOO good)

And then dumped it with the chicken for the last 7 minutes. I also made fresh jasmine rice to go along with it.  It was the perfect texture- sticky!  And I am not a rice person-it was delish.  Trust me.  I also put some whole wheat naan directly on the oven rack and baked on low for  about 5 mins.  Yum!  Wish there were leftovers!
