Dump Cake Take TWO!

Tonight we went to a friends’ house for dinner.  I made dessert to bring.

It was time for dump cake round 2, this time with the REAL amount of butter!  YUP, last time I used ONE stick, this time, I went with TWO. Nom. Nom.  Seriously.

The ingredients

Hm…so unfortunately I can’t figure out what my (new) phone did to the pictures of the finished product that I took…but here is the pic from last time…It looked EVEN better (and of course tasted better with butter times 2)!

Soooo…dinner was great and  the dump cake a hit 😉  I’m off to sleep this food coma off!  Toodles!

This has been my motto lately.  Without it, I’d go nuts.  There is no better way to deal with disappointment in your life than to just “let it be!”

Oscar certainly knows how to "let it be!"

Exhibit A:  I sign up to run my first HALF MARATHON, train my first day (a wonderful 4-miler on the TM) and wake up sick the next day, unable to train until “further notice.”  Gr. I’m gonna go with Tina’s reminder:  Exercise is to get strong, not skinny.  If I want to be strong, no exercise today 🙂  Anyway, this, like other things in life have to be let GO!  Let it go!  Liberate yourself 😉  OK, moving on…. I just HAD to post about dinner last night.  Not only was the food delish, but the company was even moreso!

YUM! Indian feasts rock!

Really? What Indian feast is complete without (regular and whole wheat) naan?

The dessert was the STAR of the evening!  My amazing next door neighbor friend, Jen, introduced me to DUMP CAKE!  LOOOOVE dump cake!  Long live dump cake! It is sooo easy, simple, quick, easy and YUMMY!

DUMP CAKE RECIPE:

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Ingredients:

  • 1 (20 ounces) can crushed pineapple, undrained
  • 1 (21 ounces) can prepared more fruit cherry pie filling
  • 1 (18.25 ounces) box yellow cake mix
  • 2 sticks of butter or margarine, each cut into 12 slices
  • 1/4 cup chopped nuts (your choice – optional)

Preparation:

Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.

Dump undrained pineapple baking dish or pan and spread it out evenly.

Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.

Sprinkle the cake mix evenly over the cherry and pineapple layers.

Cut butter into slices with a butter knife and place slices evenly over cake mix.

Sprinkle nuts on top if you’re using them.

Bake for one hour. Use heavy oven mitts to remove the dump cake from oven or let your older helper do it.

To serve, scoop cake out with a large spoon like a cobbler, and dump it on a nice plate. A scoop of vanilla ice cream is delicious with dump cake. Serve warm or cold.

Yield: about 10 to 12 servings

THOSE MUSCLES SPEAK FOR THEMSELVES, NO!?!?!

But more than anything else, Jonathan ALWAYS has my back.  He is SUCH a great friend and trainer (although I have not been “cut up” by him in a while hehe) and I would HIGHLY recommend him (“TEAM JONATHAN”) to anyone looking to tone up, lose weight, or simply feel incredible!  Jonathan trains out of his home in a beautiful clean gym (with a Super-hero theme of course)…

FUN STUFF!

I was really excited to blog this morning, I just didn’t know where to start!  I have a plethora of fun pictures and little anecdotes, and not good way to organize them, so… here we go!  Follow along, friends!

Aaaand...while preparing this post, I realized I have a LOT of pics of myself!

Last Friday I went to Garces Trading Co. with Lisa.  She is the soon-to-be wife of one of Husband’s team mates.  We talked wedding, gossip and life while munching on fabu cheese and drinking even more fabu wine.

NOM! It worked perfectly- I don't go for blue cheese, but Lisa does, so we polished this baby off in no time!

I had gone to Garces before with some blogger friends (Sabrina, Leslie, etc.) and was not very impressed with my first visit, but Friday changed my mind!  I am a total Garces fan now (especially with my newfound cheese love!).

It’s funny, because as much as I belittle laugh at Husband’s baseball obsession, I truly enjoy watching him play and he friendships that we have made because of it.

Anyway, speaking of baseball, last weekend we brought TWO doggies to the game!

We had the pleasure of dog sitting Ringo,the adorable next-door-neighbor dog.  LOVED it!  He and Oscar actually formed quite a lil’ bond by the end of the weekend!

OH RINGO!  We miss you already!  Good thing you are just next door!

OK, so moving on to a TOTALLY new topic, the new TOILET!  YAY!  I know I sound overly excited about a new simple toilet, but this was LONG overdue!  When we moved into our house about 6 years ago, we redid the bathroom in a SIMPLE way (minus removing the toilet OR steel bathtub).  It was just too expensive and such a huge project, especially with having a steel tub.  So, we had the tile redone, the vanity replaced and added shower doors.  That was SIX years ago!  Yesterday we added a new toilet!

It is a plain white toilet, but the cool thing is that tomorrow, we are having a company come and GLAZE our stainless steel tub, in effect resurfacing it to look like new!  Yay!  More pics to come!

So, moving on, that is me (above) at Tommi Studio in full hair and makeup.  I have been having fun with CHRIS the photog over there, doing some promo stuff. It is soooo fun and he is soooo talented!  Look!

Doctor it up: oven on 400 for 2 minutes, brush with EVOO and sea salt beforehand! Great snacky!

OK, so I normally try VERY hard to not give in to my own bratiness 🙂  but on Friday, I just couldn’t do it anymore!  So, I have been a member of the Sporting Club Bellevue for a bit over a year now.  It has aways tempted me to become a member of the “Executive Program” there but I promised myself I would be a “regular member” for a year, stick with that, and then re-asses.  Well, people, I re-assessed and literally “threw in the towel!”  I KNEW the second I saw the Exec Locker area I would be sold!

Yes, that is a flat screen TV, coffee machine, fruit bowl, and fridge stocked with water and REAL juice!

I get my OWN locker in a private locker room, where I can keep my stuff there ALL THE TIME!  For someone so incredibly unorganized, this is really important.  I have missed many a workout because of a forgotten sports bra, etc.  NO LONGER!  They even do your laundry for you so that you always have clean workout gear!  There are also beautiful vanities with hair dryers, etc.

Hmmmm come to think of it, I’m not sure my picture taking was 100% legal!  Don’t tell anyone!  LOL!

I CANNOT wait to go to the gym this afternoon!  I know I’m a brat, but this is JUST what I needed to re-jump start my fitness!  It is very helpful that I am absolutely OBSESSED with spinning at the Club as it takes place in a very clubby-environment (imagine all black lights, pumping music and the like)!  Anyway, I also get some free guests for being “exec” so come with me!  For real, if you email me jessdownes1@gmail.com, I WILL honor your request to drink free juice workout with me 🙂

OK, so last week was Husband’s birthday. Aside from the ridonk partay I threw him

his birthday OF COURSE included many sweet treats (Husband has quite a sweet tooth)!  I KNEW I wanted to go to the KING of pastries-Termini Brothers, and not just any Termini, but the ORIGINAL!

Well, when I got there (I had never been) I arrived to a nearly empty store so the amaaaazing employee, KIRA, offered me a TOUR!  Score!  It was AMAZEBALLS!  BUT, get this…I didn’t have my camera!  ARGH!  The tour was absolutely awesome.  Kira showed me the back where they have literally taken over almost the entire block, knocking down houses to make more baking/storage areas.  Kira told me that their catering department will be expanding soon so they are making more room.  I got to see all of the ORIGINAL equipment (wooden tables, mixers, etc.) which were restored and gorgeous.  Even the cash registers were antique!  Holy wow and yum, let me say.  This amazing tour included taste tests!  I also got Husband some cannoli which they filled with fresh cream right in front of my eyes!  I was ONE happy camper!

YUM!

SOOOO many choices!  I went to the car, grabbed my car, and by the time I returned, the entire place was filled!  NOW I know why!

Anywhoooo, Happy Birthday month week, Husband!
