Taking a Break

Hi All! ¬†As you might have noticed, I have been taking a bit of a break over the past couple weeks…

A break from blogging…

A break from running…

A break from cooking….

A break from my crazy life ūüôā

So, I was struck with a HORRIBLE case of mastitis that lasted almost TWO weeks! It was truly awful, as I don’t deal well with not being my normal “healthy” self. ¬†I couldn’t function properly, couldn’t run, and even found it hard to care for my adorable little man…who is now TOTALLY walking! ¬†It is soooo cute! ¬†Granted, it is still a bit Frankenstein-ish, but he is on the move! ¬†Boy, has it been a game-changer! ¬†i never pushed the issue because I knew it would be and hey, all kids eventually walk ūüôā ¬†I have really tried to savor every moment of little Zachy’s life and not rush through any of the moments, in this case, his reliance on his “peg-leg” crawl. It is too funny. I will post a video one day. ¬†He drags his one leg when he crawls and it is a-DOR-able! ¬†Anyway, here are a few things we have been up to while “on a break.”

We visited the beautiful Hershey Gardens

Muffins and More

Hello everyone! ¬†Again, I’ve been MIA- sorry! ¬†Believe it or not, when I don’t feel like I have much to say, I don’t say anything at all (contrary to popular opinion lol). ¬†ANYWAY, here is a bit about what has been going on in our lives! ¬†First things first, MUFFINS! ¬†I have been making Zachy a LOT of muffins. ¬†I use all-natural ingredients so they are healthy and delicious so I wanted to share! I mix it up a lot (as I will show you below). Here is what you will need:

2 1/4 cups flour (I use a combo of whole wheat and white and sometimes even oats- for instance yesterday I used 1 c oats, 3/4 whole wheat and 3/4 white

2 tsp baking powder

1 tsp baking soda

1 c raisins ro dried cranberries (SOAKED- see below)

1 c orange juice

2 ripe bananas mashed

1/2 cup sugar

1/4 cup veg oil

1 tbsp cinnamom

OK, so FIRST, soak raisins or cranberries in HOT HOT water for about half hour (the longer the better-jucier!)

Then, mash your bananas.

In a different bowl, mix the flours (or oats), baking powder, baking soda, and cinnamon.

MIx the oj, oil and sugar with the mashed bananas.  Add the flour mixture.  Then mix in the raisins or cranberries.  Spoon mixture into sprayed muffin tin. Mine usually yield 12-14 muffins.  Bake on 375 (or 400 if you have a weak oven) for 20-25 (I usually do 22) minutes.

ENjoy!  These are low sugar, sweetened naturally, and delicious!  Baby loves them!

OK, so what’s more?! ¬†Well, lately we have been spending a LOT of time outdoors due to the amazing weather! ¬†Sunday we attended the Seger Park Festival (I was representing the Nest) and it was super fun!

Speaking of outdoors, I wanted to share a new (to me) product that allows you to quickly and easily apply sunscreen, even to baby! ¬†It is portable and SO simple. ¬†It is called ColoreScience Sunforgettable mineral sunscreen powder. ¬†It retails for 50 dollars but you can buy refills. ¬†I LOVE it and Zach thinks he is “getting tickled!”

Moving on, all of our spring classes (ie music) are wrapping up, so we are getting ready to start planning our summer schedule. ¬†I am going to try to cut back a bit on scheduled things so to allow more time for fun trips to the zoo and what not. ¬†My parents also have a pool at their apartment complex that we used a LOT last year. ¬†Zach LOVES the water, so get ready to see some cute baby in bathing suit pics ūüėČ ¬†Anyway, what is up with you?! ¬†Tell me: ¬†What are your summer plans?!
